Taking a salad to a summer day gathering? This one’s simple, unique and beautifully summery. With sweet strawberries, creamy Danish-style feta, and crunchy pecans, it’s full of texture and flavour and always impresses.

🥗 Recipe: Strawberry and Danish Feta Salad
Recipe inspired by a feature in Edible Vancouver Island (Issue 33, May /June 2025), originally written by Elizabeth Nyland.
For the dressing:

1 tsp Dijon mustard
-
1 tsp honey
-
¼ cup extra virgin olive oil
-
3 Tbsp verjus (or mix of white wine vinegar + grape or lemon juice)

Salt + pepper to taste
For the salad:

Fresh strawberries, sliced
-
Creamy Danish-style feta cut in squares
-
Mixed greens (rocket, spinach, or lettuce)

Toasted pecans or walnuts

Fresh basil, torn
To make:

Shake up the dressing ingredients in a small reused glass jar.

Layer the salad ingredients in a large bowl.

Cover with a breathable fabric dish cover and keep the dressing separate until just before serving or leave on the side for self serve.
Tip: Leaving the dressing on the side helps the salad stay crisp for longer which is ideal for those who go back for seconds.
