Couscous Instant Salad

Here's an easy, ready-in-an-instant Couscous Salad with minimal prep, no chopping, and it still looks and tastes like you spent hours on it! Perfect dish to bring to a gathering and it’s perfect for making ahead of time. 


Couscous & Chickpea Salad 

You need:

  • 1½ cups instant couscous

  • 1½ cups boiling water or store-bought veggie broth (add a stock cube if using water)

  • 1 can chickpeas (drained and rinsed)

  • ½ jar marinated sliced sundried tomatoes,(optional: roughly chopped and pour in a little of the marinade for flavour!)

  • ½ tub crumbled feta

  • Handful of baby spinach or arugula (optional, no chopping needed!)

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • Salt & pepper

Assembly (5–10 minutes):

  1. Prep the couscous:
    Add couscous to a large bowl. Pour over 1½ cups boiling water or hot stock. Cover with a SpaZa Dish Cover and let sit for 5 minutes. Fluff with a fork and let cool slightly.

  2. Toss everything together:
    Add chickpeas, sundried tomatoes, and feta. Drizzle with lemon juice and olive oil. Season with salt and pepper to taste.

  3. Optional Greens:
    Stir in spinach or arugula just before serving for a fresh pop of colour.

Chill or serve at room temp.
Travels well under the same SpaZa dish cover and gets better as it sits!
